Apple Crumble Crunch


Ingredients
  • 1 green apple, peeled and chopped
• Handful of sultanas
• Pinch of cinnamon
• ½ cup rolled oats
• 4 Vive Lites Apricot & Coconut Cookies, crushed
• Brown sugar, honey or sugar substitute
• Yoghurt

Method
Preheat oven to 180-200 degrees Celsius. Mix the apple, sultanas and cinnamon together in a ramekin. In another bowl make the Crumble Crunch topping by combining the rolled oats, Vive Lites Apricot & Coconut Cookies, sugar/honey or substitute and enough yoghurt to make it crumbly but not sticking together. Spoon mixture over the apple mix and bake for 15 minutes (or longer if you prefer soft apples). Serve with low-fat custard.

Cookie Crunch Ice Cream


Ingredients
  • 405g can of sweetened condensed skim milk
• 500g low-fat plain yogurt
• 2 tsp vanilla extract
• 100g Paradise Vive Lites Caramel Pecan Cookies
• 4 brandy snap baskets (optional)
Method
1. Whisk together the condensed milk, yogurt and vanilla extract.
2. Put the biscuits in a plastic bag, seal and roughly crush with a rolling pin. Stir into the cream mixture and
    turn into a freezer-proof container.
3. Freeze until firm - for about 5 hours. For a smoother texture, stir the frozen mixture every hour or so during
    freezing to break up any ice crystals.
4. Serve a scoop in an elegant glass, or brandy snap basket.

Quick 'n' Easy - Cookies and Cream Ice Cream


Ingredients
  • 50ml individual tub of low fat vanilla ice cream (or similar)
• Paradise Vive Lites Choc Chip cookie
Method
1. Soften the ice cream.
2. Put the cookie in a plastic bag, seal and roughly crush with a rolling pin. Stir into the ice cream.
3. Re-freeze.
